Ingredients for Moong Dal Malpua
- Moong Dal - 1/2 cup (100 grams)
- Milk - 1 Cup n 2 tbsp
- Semolina - 1/2 cup
- Sugar - 2 tbsp
- Cardamom - 3 no, crushed
- Sugar - 1.5 cup (300 grams)
- Cardamom - 3-4, crushed
- Saffron - 10-12 strands

Step by Step recipe of Moong Dal Malpua

Step 1: Soaking the Moong Dal
Rinse the moong dal under water and soak it in enough water for about 1 hour.
After soaking, drain the water from the dal.

Step 2: Grinding the Moong Dal
In a blender or food processor, add the soaked and drained moong dal.
Add 2 tablespoons of milk and grind it into a coarse paste. Add more milk if needed.
Transfer the ground moong dal paste into a mixing bowl.

Step 3: Making the Batter
To the moong dal paste, add semolina, sugar, and crushed cardamom pods.
Mix everything well to form a smooth batter.
Gradually add 1 cup of milk while stirring the batter. Adjust the consistency as needed. The batter should be of pouring consistency.

Step 4: Preparing the Sugar Syrup
In a separate saucepan, add 1.5 cups of sugar and 1.5 cups of water.
Place the saucepan on medium heat and stir until the sugar dissolves.
Add the crushed cardamom pods and saffron strands to the sugar syrup.
Let the sugar syrup simmer for a few minutes until it reaches a slightly sticky consistency. Keep it warm.

Step 5: Frying the Malpua
Heat oil or ghee in a frying pan or skillet over medium heat.
Pour a ladleful of the batter into the medium-hot oil and pour it gently to form a round shape.
Fry the malpua on medium-low heat until it turns golden brown on both sides. Flip it once to ensure even cooking.
Remove the fried malpua from the oil and drain excess oil.

Step 6: Soaking the Malpua
Immediately transfer the fried malpua into the warm sugar syrup.
Allow the malpua to soak in the syrup for a minute or two on each side.
Remove the malpua from the syrup and place it on a serving plate.

Step 7: Serving
Garnish the malpua with some chopped cashews and pistachios if desired.
Serve the Moong Dal Malpua warm as a delightful dessert.
