Traditional Greek Chicken soup - Greek Cooking by Katerina

A delicious heart warming greek soup, a real classic dish which we can easily call the definition of comfort food. We make it with traditional avgolemono, egg and lemon which is added in the soup to make it richer and give it a great texture. I hope you make it and enjoy it. Kali orexi!

Ingredients: 1/2 or a whole chicken, 1 chopped onion, 1 chopped carrot, 1 potato cut in pieces, olive oil, 1/2 cup of medium grain rice for soups, salt and pepper, 1,5 lt water, chicken stock. For the egg-lemon mixture (avgolemono): 3 eggs, the juice of 1 1/2 lemon, salt and pepper. Follow my instructions and you'll have the perfect traditional greek chicken soup with avgolemono!
