Traditional Turkish Beef Stew

Ingredients for Beef Stew:
Oil 1/2 cup
Onion (sliced) 2 cups
Green cardamoms 4-5
Coriander seeds 1 tbsp
Bay leaf 1
Star anise 2
Cinnamon stick (1 inch) 2
Beef boneless 1 kg
Tomato paste 2 tbsp
Water 8 cups
Carrot (sliced) 1 cup
Zucchini (peeled & sliced) 1 cup
Peas 1 cup
Potatoes (peeled & sliced) 1 cup
Black pepper powder 1 tbsp
Salt 1 tsp
Red capsicum (cubes) 1 cup
Yellow capsicum (cubes) 1 cup
Green capsicum (cubes) 1 cup

Ingredients for Dough:
All-purpose flour 2 cups
Sugar 1 tbsp
Salt 1 tsp
Yeast 2 tsp
Yogurt 1/4 cup
Lukewarm water as required

Ingredients for Assembling:
Beef stew
Prepared dough
Egg wash (As required)
White sesame seeds (as required)
Nigella seeds (as required)

Directions for Beef Stew Preparation:
1. In a pot heat oil and add onion, cook for 2-3 mins.
2. Now add green cardamoms, coriander seeds, bay leaf, star anise, cinnamon sticks and cook for 1-2 mins.
3. Add beef and cook until beef changes color. Add tomato paste and mix it well.
4. Add water and cover and cook over medium low flame for 2 hours or until meat is tender.
5. Add carrots, zucchini, peas, potatoes, black pepper powder, salt and cook for 1-2 mins.
6. Now add red, green and yellow capsicum. Cook until veggies are done. Set aside.
Directions for Dough Preparation:
7. In a bowl add flour, salt, sugar, yogurt, yeast, water and knead a smooth dough. Cover with cling film and let it rest until it doubles in size.
8. Now remove the cling film and gently punch the dough to release air.
9. Now roll the dough out inti flat circle. Set aside.
Directions for Assembling:
10. Transfer the prepared stew into a clay pot. Cover the pot with rolled-out dough. Make sure the edges are properly sealed and combined.
11. Brush egg on the dough, sprinkle sesame seeds, nigella seeds on the dough.
12. Now bake it in a preheated oven at 180C for 10-12 mins.
13. Your Traditional Turkish Beef Stew is ready.
