Traditional Vella Seedai by Meenama Tips & Techniques for perfect Vella Seedai

Vella Seedai
Ingredients:
Rice flour - 2 cups
Roasted & ground urad dal - 1 heaped tsp
Jaggery powder - 1 cup
Water for Jaggery solution - cup
Freshly grated coconut - cup
White/black sesame seeds - 2 tsp
Cardamom powder - tsp
Oil - for deep frying
Method:
First fry roast few tsps of White urad dal till golden
When it reaches room temperature, grind to a fine powder and keep aside
In a pan, add 1 cup of jaggery
Add a cup of water to cover the jaggery
Cook just till the jaggery melts
Switch off flame
In a bowl, add the 2 cups of rice flour
Add the 1 tsp of roasted & ground urad flour
Add cup of fresh coconut
Add 2 tsp of sesame seeds
Add cardamom powder
Now add the jaggery solution little by little to make a soft dough
Allow the dough to rest for few hours
Now divide the dough into equal sized roundels
Heat oil for deep frying till bubbly
Reduce flame to low
Deep fry the Vella Seedai in just few numbers over slow flame till golden in both sides
