Turkey ghee roast
Ingredients Quantity
For marination
Turkey breast cubes 1no.
Yoghurt ½ cup
Turmeric powder 1tsp
Salt to taste
For masala
Cloves 4-5 no.
Whole coriander seeds 2tbsp
Black pepper 2tsp
Saunf 1tsp
Cumin seeds 1tbsp+ 1tbsp
Fenugreek seeds 1tsp
Dry red chilies 15-20 no.
Cinnamon stick 1no.
Curry leaves 6-8no. + 6-8no.
Ginger cubes 1inch
Garlic 8-10 pods
Tamarind soaked in water ¼ cup
Water as required
Ghee ½ cup
Onions chopped 2no.
Salt to taste
Jaggery powder 1tsp
Coriander for garnish.


Method
1. First take the turkey breast and cut into small cubes. Wash the turkey, and put it in a bowl.
2. Now in a bowl add turkey, yogurt, turmeric powder, salt to taste and mix it properly and keep aside.
3. Now in a pan add cloves, whole coriander seeds, black pepper, saunf, cumin seeds, fenugreek seeds, whole dry red chilies, cinnamon stick, curry leaves and roast it properly.
4. Now when the aroma starts coming, add it in the mixer grinder and add, ginger, garlic and tamarind pulp and water in it and grind it into fine paste.
5. Now in pan add ghee, cumin seeds, curry leaves, onions chopped and sauté it.
6. Now add the marinated turkey in it and sauté again for a while.
7. Now add the spice paste in the pan and cook till the turkey leaves ghee.
8. Let it cook for 15-20 mins properly.
9. Now add salt to taste and balance the turkey.
10. Once the masala gets dry and turkey leaves ghee, means our ghee roast turkey is ready.
11. Our Ghee Roast Turkey is ready, garnish with coriander.
12. Serve hot.
