Full recipe for Turkey Lababdar
Ingredients Quantity
Turkey breast ½ no.
Red chili powder 1 ½ tsp
Turmeric powder ¼ tsp
Garam masala 1tsp
Lemon juice 1no.
Ginger garlic paste 1tbsp
Salt to taste
Black pepper ½ tsp
Chaat masala ¼ tsp
Curd 2tbsp
Kasuri methi ½ tsp
Oil 1tbsp
Tomatoes ½ cup
Red bell pepper ½ cup
Yellow bell pepper ½ cup
Green capsicum ½ cups
Onions ½ cup
For gravy
Oil 4tbsp+ 2tbsp+ 1tbsp
Cinnamon stick ½ inch
Cloves 4-5no.
Black pepper 1tsp
Cumin seeds 1tsp+ 1tsp
Black Cardamom 1no.
Green cardamom 2no.
Onions slices 2-3no.
Ginger garlic paste 1tbsp
Tomatoes chopped 3no.
Salt to taste
Red chili powder 1tsp
Turmeric powder ½ tsp
Garam masala ½ tsp
Coriander powder 2tbsp
Water as required
Cashew nuts 12-15no.
Melon seeds 1tbsp
Curd 2tbsp
Butter 2tbsp
Bay leaf 2-3no.
Ginger 1inch
Green chilies 3-4no.
Onion cubes 1tbsp
Capsicum cubes 1tbsp
Yellow bell pepper cubes 1tbsp
Red bell pepper cubes 1tbsp
Tomatoes cubes 1tbsp
Red chili powder 1tsp
Garam masala ½ tsp
Kasuri methi 1tsp
Fresh cream ½ cup
Ginger juliennes for garnish
Black pepper for garnish
Butter for garnish
Method
1. First take the turkey breast and cut it into cubes (tikka).
2. Now take a bowl, add turkey, red chili powder, turmeric powder, garam masala powder, lemon juice, ginger garlic paste, salt to taste, black pepper, chaat masala, curd and mix it properly.
3. Add some oil, kasuri methi and mix it again and skewers them along with onion cubes, yellow bell pepper, capsicum, red bell pepper and keep them aside for 20 mins to marinate properly.
4. Now in kadai add oil, cinnamon stick, cloves, black cardamom, green cardamom, black pepper, cumin seeds and sauté it.
5. Now add onion slices and sauté it properly for 3-4mins.
6. Now add ginger garlic paste and sauté again for 2mins.
7. Now add tomatoes chopped, salt and sauté again for 2-3mins.
8. Now add red chili powder, turmeric powder, garam masala, coriander powder and sauté again.
9. Now add water, cashew nuts, melon seeds, curd and mix it properly. Keep this aside and let it cool down
10. Now in grill pan, add oil and grill the marinated turkey from all the sides
11. No grind the gravy in the grinder properly by adding little bit of water in it.
12. Now in kadai add oil, butter, cumin seeds, bay leaf, ginger juliennes, green chilies, onion cubes, red bell pepper, capsicum, yellow bell pepper, tomatoes and sauté it properly.
13. Now add red chili powder, garam masala, and add the turkey tikkas in it and sauté it.
14. Now add the gravy and mix it again.
15. Now add kasuri methi, fresh cream and mix it properly.
16. Our turkey Lababdar is ready.
17. Garnish it with some ginger juliennes, black pepper and butter.
18. Serve hot with rice/roti.
