Turkey saagwala is a protein rich dish, with lots of green winter vegetables and a turkey breast, lots of spices, altogether make a perfect protein dish for your lunch or dinner.


Turkey Saagwala

Ingredients quantity
For Marination
Turkey breast cubes ½ no.
Red chili powder 1 ½ tsp
Garam masala 1tsp
Turmeric powder ½ tsp
Ginger garlic paste 1tbsp
Curd 2tbsp
Salt to taste

For Saagwala
Spinach leaves chopped 1bunch (200gms) + ½ bunch
Mustard greens leave chopped 1bunch (200gms) + ½ bunch
Fenugreek leaves 1cup
Pigs weed (bathua) 1cup
Green chilies slit 2-3no.
Ginger juliennes ½ inches
Salt to taste+ to taste
Water as required+ 2cup
Cornmeal flour 2tbsp
Oil 5-6tbsp+ 3-4tbsp
Cumin seeds 1tsp
Garlic chopped 1tbsp
Garlic chopped 1tbsp
Green chilies chopped 3-4no.
Onion chopped 2no.
Tomatoes 2no.
Coriander powder 1 ½ tbsp
Red chili powder ½ tsp
Turmeric powder ½ tsp
Garam masala 1tsp
Dry mango powder ½ tsp
Ghee 2tbsp+ 1tbsp
Fresh cream for garnish



Method
1. First take the turkey breast and cut it into cubes, cut the white color vein from it.
2. Remove the skin from the top, cut it into half and make cubes from it.
3. Now in bowl add turkey pieces, red chili powder, turmeric powder, garam masala, ginger garlic paste, salt to taste and curd, marinate altogether properly and let it rest for 15-20mins.
4. Now take one bunch of spinach leaves and one bunch of mustard green leaves and chop it properly.
5. Now in pressure cooker add spinach leaves, mustard green leaves, pigs weed (bathua), fenugreek leaves , green chilies slit, ginger juliennes, salt to taste, water as required and let it cook for 25mins in the cooker.
6. Now mash the greens properly, and add cornmeal flour in it.
7. Now in kadai add oil, let it heat up then add marinated turkey breast in it and cook till it is half done. Repeat the same with the remaining one.
8. Now in kadai add oil, cumin seeds, garlic chopped, ginger chopped, green chilies chopped and sauté for a min.
9. Now add chopped onions and sauté till they are translucent in color, add chopped tomatoes, and salt to taste and sauté it properly.
10. Now add coriander powder, red chili powder, garam masala, turmeric powder and sauté it again properly.
11. Now add dry mango powder, and marinated turkey.
12. Now add water and let it cook properly.
13. Now add cooked greens (saag) in it and sauté it properly.
14. Add ghee in the saag and cook for at least 15mins properly.
15. Our Saagwala turkey is ready to serve.
16. Garnish it with some fresh cream and a spoon full of ghee
17. Serve hot with parathas.
