500gr. Green beans
1 large onion
2-3 ripe tomatoes
3-5 cloves of garlic
1 cup or less of fine natural bulgur
Salt, black pepper
Olive oil
Wash the green beans, cut their stems and chop them into 1 cm thick pieces.
Peel the onion and tomatoes and dice.
Saute the onion in olive oil with some salt. First add the beans, garlic, then the tomatoes and saute for a few more minutes.
Add cup of water and cook until the beans become soft. Add bulgur, salt and black pepper, add 1+1/2 cups of water again and cook until bulgur becomes soft.
Let it brew for 10 minutes and serve hot, warm or cold.
