I love making pita bread called "balon ekmek" in Turkish, perfect for breakfast or sandwiches.Ingredients:One cup lukewarm water10 gr. Fresh yeast or tsp dry yeast1 tsp sugar 3 cups mix of all purpose and whole wheat flour 1 tbsp olive oil1+1/2 tsp saltFirst, I made a soft yeast by mixing whole wheat and all purpose flour. After the first rise, I cut them into half lemon size pieces and turned them into balls. Roll them into about 2 mm thickness and rest between clean kitchen towel that is dampened. I heat it up my griddle and placed from the rested pieces . Cooked for 15-20 seconds. when it begins to have some bubbles, I turned them over, cooked the other side for another 10-15 seconds. Then I turned them back and this way sealed the bread with air pocket inside. Now you can watch happily how your baloon breads, pitas rises In total it takes around 2,5 min to cook one batch.While cooking these breads for our Turkish breakfast, I also made eggs with sucuk.
