Turkish Soft BUNS "Ama" Bread

Discover Achma "ama", a popular, rich soft bread or bun we eat for breakfast or as a quick snack, that goes well with Turkish tea or coffee. After the sesame ring bread "simit", it is widely available as a street food as well.
Ama means to open. In this episode, I'm going to show you how to give its unique shape similar to bakeries while making it rich, buttery and soft.

You can freeze the rest while it is still fresh and reheat it in a pan with the lid after it is thawed. It will be fresh like out of the oven to enjoy any time whenever you want.

Ingredients for ama recipe:
200ml milk
400ml warm water
100ml vegetable or olive oil
2 tbsp sugar
30gr. fresh or 1 package double acting dry yeast
6+1/2 cups or more all-purpose flour
2-3 tsp mahlep powder (optional)
2 to 2+1/2 tsp salt

to open the dough balls abut 125gr. butter at room temperature
optional filling: olive paste, chocolate spread

for the egg wash: 2 egg yolks, 2 drops of grape molasses (optional)
