These beautiful cupcakes with colourful frosting are sure going to excite the toddlers!

TUTTI FRUITY CUPCAKES

Ingredients

¼ cup tutti fruity + for sprinkling
½ cup butter, softened
½ cup condensed milk
1 cup refined flour (maida)
½ tsp baking soda
1 tsp vanilla essence
Frosting
20 grams butter, room temperature
100 grams icing sugar
2 tbsps milk
1 tsp vanilla essence
Garnish
Sugar sprinklers

Method

1. Preheat the oven at 180°C and line a small muffin mould with cupcake liners.
2. Take butter in a bowl, add condensed milk and beat using an electric hand beater till the mixture is light and fluffy.
3. Mix together refined flour, tutti fruity and baking soda and mix. Add into the butter mixture and beat again. Add vanilla essence, milk and beat till well combined.
4. Pour the batter into each mould, sprinkle a little tutti fruity on top and tap it. Place the muffin mould in the preheated oven, bake for 15 minutes.
5. Take the muffin mould out of the oven and allow to cool slightly, de-mould and allow to cool completely.
6. To make the frosting, take butter in a bowl, add icing sugar in two batches and beating the mixture in between till light and fluffy.
7. Add milk and vanilla essence and beat again till well combined.
8. Peel the cupcake liners and spread a little frosting on top of each cupcake, sprinkle sugar sprinklers on top and serve.
