UKAD PENDI

Ingredients

1½ cups whole wheat flour (gehun ka atta)
¼ cup oil
2-3 green chillies, chopped
2 tbsps chopped garlic
2 medium onions, chopped
Salt to taste
1½ tsps red chilli powder
½ tsp turmeric powder
½ tsp dried mango powder (amchur)
½ tsp asafoetida (hing)
½ tsp sugar
2-3 tbsps chopped coriander leaves
Fresh coriander sprig for garnish

Method

1. Heat oil in a non-stick pan. Add green chillies and garlic and sauté for 1 minute. Add onions, mix and cook till golden brown.
2. Add salt, red chilli powder, turmeric powder, and dried mango powder and sauté for 1-2 minutes.
3. Add whole wheat flour and sauté till fragrant and golden brown. Add 3 cups water, mix and cook for 7-8 minutes.
4. Add asafoetida and sugar and mix well. Add coriander leaves, mix and cook for a few seconds.
5. Serve hot garnished with coriander sprig.
