Ulli Karam is a spicy chutney from Andhra Pradesh which is spread on the dosa along with some ghee and cheese. Serve it hot with chutney!

ULLI KARAM DOSA

Ingredients

2-3 large onions, chopped
2-3 dried red chillies
2 cups ready-made dosa batter
1 tbsp ghee + for drizzling
1 tsp cumin seeds
4-5 garlic cloves
1 small lemon sized tamarind ball
Salt to taste
1 cup grated processed cheese
8 tbsps chopped fresh coriander leaves
Coconut chutney to serve
Tomato chutney to serve

Method

1. Heat ghee in a non-stick pan. Add cumin seeds and let them change colour.
2. Add dried red chillies, onions, and garlic cloves and sauté till the onions turn light golden brown.
3. Break the tamarind into small pieces and add into the pan. Add salt and mix well. Cook for 1-2 minutes.
4. Take the pan off the heat and allow the mixture to cool slightly.
5. Transfer the onion mixture into a blender jar and add 1 cup water and blend to a fine paste.
6. Take dosa batter in a large bowl. Add salt and mix well.
7. Heat a non-stick tawa. Pour a ladleful of the batter and spread it to make a thin dosa.
8. Drizzle ghee and evenly apply 2-3 tbsps of the blended chutney.
9. Sprinkle a portion of cheese processed and 2 tbsps coriander leaves and cook for 2-3 minutes on medium heat.
10. Roll the dosa from one end to the centre and serve hot with coconut chutney and tomato chutney.
