16 ounces semi-sweet chocolate
8 ounces heavy cream (1 cup)

Milk Chocolate Ganache (2.5:1) 04:54
20 ounces milk chocolate chips
8 ounces heavy cream (1 cup)

White Chocolate Ganache (3:1) 05:57
24 ounces white chocolate chips
8 ounces heavy cream (1 cup)

Instructions

Basic Ganache (All Ratios)

1 Place chocolate into a glass or metal mixing bowl. If using chocolate bars, roughly chop the chocolate into small chocolate chip-sized pieces.

2 Heat cream in a small saucepan over medium heat until it comes to a simmer. Once simmering, immediately remove from the heat and pour over the chocolate.

3 Let sit 2 to 3 minutes to allow the heat from the cream to melt the chocolate. Use a rubber spatula to gently stir until the chocolate is completely melted and the ganache is smooth. Use as desired.

Whipped Chocolate Ganache

1 Follow the steps to create a basic ganache. Once the cream and chocolate are combined and smooth, cover, and chill the ganache in the fridge for 1 hour.

2 Remove ganache from the fridge. Use a hand mixer to whip the ganache until light and fluffy, about 3 to 4 minutes. Use as desired.
