Green cardamom, 2 no. Cloves, 5-6 no. Black peppercorns, tsp Fennel seeds, inch Lemon grass, For Tea 2 cups Water, Prepared Tea Masala, 1 heaped tbsp black Tea leaves, cup Jaggery, roughly chopped, 1 cup Milk, For Garlic Green chilli Paste 2-3 no. Green chillies (less spicy & roughly chopped) 6-7 no. Garlic cloves, roughly chopped, For Vada Mixture7-8 no. large Potatoes (boiled & peeled) Prepared Garlic Green chilli paste, Prepared Tadka, Salt to taste, 2 no. Green chillies, chopped, cup Coriander leaves, chopped, For Tadka 1 tbsp Oil, tsp small Mustard seeds 3-4 no sprig Curry leaves tsp Asafoetida, tsp Turmeric powder1 tbsp Butter, cubedFor Batter2 cups Gram flourSalt to taste2 tsp SugarWater a required tsp Turmeric powderRemaining excess oilFor Dry Garlic Chutney cup Oil, 8-10 no. Dry red chillies7-8 no. Garlic cloves (with skin)2 tsp Degi red chili powderSalt to tasteFried besan crumbsOther IngredientsOil for frying, For Toasting Buns1 tbsp Butter, cubed2 no. Burger bunsFor Fried Chillies1 tsp Oil, 1 tsp Butter, cubed4 no. Green chillies (less spicy & slit into middle)Salt to tasteFor AssemblingToasted Burger buns, ButterGreen chutney Fried besan crumbsBatata vadaCheese sliceDry Garlic ChutneyFried Green chilliesProcessFor Tea MasalaIn a mortar pestle, add green cardamom, cloves, black peppercorns, fennel seeds, lemon grass and grind it coarsely.Keep it aside for further use.For TeaIn a saucepot, add water, prepare chai masala and boil it for 4-5 minutes on medium flame.Add tea leaves, jaggery and simmer it for a while.Add milk and take a quick boil. Strain it with the help of a strainer and pour it in the serving cups or glass.Serve hot.For Garlic Green Chilli PasteIn a mortar pestle, add green chillies, garlic and grind it coarsely.Keep it aside for further use.For Vada MixtureIn a bowl, add boiled potatoes and mash it well, add prepared garlic green chili paste and give a good mix.Add prepared tadka, salt to taste, green chillies, coriander leaves and mix it well.Give it a desired shape and keep it aside for further use.For TadkaIn a pan, heat oil, add mustard seeds, curry leaves and let it splutter.Add asafoetida, turmeric powder, butter and saute it for a few seconds.Keep it aside for further use.For BatterIn a bowl, add gram flour, salt to taste, sugar, water as required and mix it well.Add turmeric powder, remaining excess oil and make a smooth batter.Dip the prepared vada in the batter and coat it well.Place the vada into medium hot oil and fry until golden brown.Keep it aside for further use.For Dry Garlic ChutneyIn a pan, heat oil, add dry red chillies and roast it for a minute on medium flame.Transfer it to a tray, add garlic clove, degi red chili powder, transfer it to a mixer grinder jar and grind it coarsely.Add salt to taste, fried besan crumbs and grind.
