A classic from Maharashtrain cuisine, made with simple and everyday ingredients, Varan Phal is a super-comforting dish for all!VARAN PHALIngredients1 cup Tata Sampann Toor Dal¼ tsp turmeric powder½ tsp asafoetida (hing)2-3 tbsps ghee + for greasing + for drizzling1 tsp mustard seeds½ tsp cumin seeds¼ tsp fenugreek seeds (methi dana)12-15 curry leaves2-3 green chillies, slit1½ tbsps finely chopped garlic2 tbsps goda masala1 tbsp tamarind pulp2 tsps chopped jaggerySalt to tasteReady-made dough made using 1 cup whole wheat flour and salt1 tbsp freshly chopped coriander leavesCoriander sprig for garnishFried papads to serveOnion rings to serveLemon wedges to serve Method1. In a large bowl, add Tata Sampann Toor Dal and sufficient water, wash it and drain. Add sufficient water and soak for 30-35 minutes. Pressure cook with turmeric powder and ¼ tsp hing.2. Heat ghee in a non-stick deep pan, add mustard seeds and let them splutter. Add cumin seeds, fenugreek seeds, curry leaves and green chillies. Add remaining asafoetida and garlic, sauté till it turns golden brown.3. Add the cooked dal and mix well. Add goda masala, tamarind pulp and jaggery and salt. Mix till well combined.4. Add 2½ cups water and mix well. Cover and cook till the mixture comes to a boil. 5. Take a portion of the dough, shape it into a ball and flatten it. Grease the worktop with ghee and roll it into a thin disc.6. Cut the disc into diamond shape or any desired shape. Add this to the boiling dal, mix well.7. Add chopped coriander and mix. Cover and cook on low heat for 10 minutes or till the phal is cooked completely.8. Transfer into a serving bowl, drizzle a little ghee and garnish with coriander sprig.
