VARI KA PULAOIngredients1½ cups vari1½ tbsps ghee1 tsp cumin seeds3 green chillies10-12 cashew nuts, halved1 medium carrot, cut into small cubes80 grams yam (suran), peeled and cut into small cubes80 grams red pumpkin, peeled and cut into small cubes1 medium tomato, deseeded and cut into small cubes1 tbsp ginger-green chilli pasteSenda namak to taste2 tbsp chopped fresh coriander leavesFresh coriander sprig for garnish Method1. Heat ghee in a deep non-stick pan, add cumin seeds and let them change colour. Break the green chillies in half and add in the pan, sauté well.2. Add cashew nuts, carrot and yam and sauté well. Cook for 1-2 minutes. Add red pumpkin, tomato, ginger-green chilli paste and senda namak and mix well. 3. Add vari and sauté for 1 minute. Add water 2 ½ cups and mix well. Adjust senda namak. Cover and cook for 8-10 minutes. 4. Add chopped coriander and gently mix. Take the pan off the heat and transfer on to a serving plate.5. Garnish with fresh coriander sprig and serve hot.
