The Mughals used to hold special meetings around their Palaces which would be called #Diwan-e-khaas which would be for all senior people and Diwan-e-aam which would public meeting hall where the King would call for meeting and listening to grievances of common man. When the Special Khansamas would create dishes they would be informed about the dining places and hence they would name the dishes accordingly.This recipe i have learnt while I was training with Begum Mumtaz Khan in Hyderabad and i am sharing my experience with you all today. #indianfood #curry #hyderabadicuisine #regionalfood #traditionalfood Diwan-e- HandiIngredient’s QuantityOil 3-4 tbsp+ 1tspGreen cardamom 3-4 no.Clove 2no.Cumin seeds 1tsp+1/2 tspOnion chopped 2no.Ginger garlic paste 1tbspTomatoes chopped 2no.Salt to tasteCoriander powder 2tbspRed chili powder 1 ½ tspTurmeric powder ½ tspCashew nuts 10-12no.+ for garinshWater as requiredBay leaf 2no.Ginger juliennes ½ tspGreen chilies 2-3no.Carrot cubes blanched 1small.Cauliflower ½ no.Capsicum cubes 1small.French beans ½ cupGreen peas ½ cupRed chili powder ½ tspGaram masala 1tspKasuri methi 1tsp+ for garnishPaneer ½ cupFresh cream 2tbsp+ for garnishKewra water 2-3 dropsMethod1. First in kadai add oil, green cardamom, cloves, cumin seeds, and sauté it properly.2. Now add chopped onions and sauté till brown in colour.3. Now add ginger garlic paste and saute again.4. Now add chopped tomatoes, salt to taste and saute again properly.5. Now add coriander powder, red chili powder, turmeric powder, cashew nuts whole and saute it properly for 2-3mins.6. Now cool down the mixture and grind it in the mixer grinder by adding little water in it.7. Now in same kadai add oil, bay leaf, cumin seeds, ginger juliennes, green chilies slits and saute properly.8. Now add carrot cubes, cauliflower, capsicum cubes, French beans, green peas and mix it properly.9. Now add red chili powder, garam masala, kasuri methi and saute it properly.10. Now add the paste which we did earlier and mix it properly.11. Now add paneer cubes, fresh cream and mix it properly and cook for 2mins.12. Now add kewra water for good smell.13. Our Diwan-e- Handi is ready14.
