VEG SHAMI KEBAB WITH TEMPAYY
Preparation time 10 minutes
Cooking time 15-20 minutes
Serve 2-4

Ingredients
For Shami Kebab
1 tbsp Oil,
1 inch Ginger (peeled & finely chopped)
2 no. Green chillies (less spicy & finely chopped)
3 medium Carrots (peeled & grated)
8-10 no. French beans, finely chopped,
Marinated Tempayy cubes,
tbsp Oil,
Salt to taste,
cup Water,
1 tsp Prepared Masala,

For Marination
200 gms Natural Tempayy cubes,
1 tbsp Lemon juice,
2 tbsp Curd, beaten,
1 tsp Ginger Garlic paste,
1 tsp Degi red chili powder,
tsp Turmeric powder,
1 tsp Coriander powder,

For Masala
5 no. Black cardamom,
4-5 Cloves,
1 tbsp Black peppercorns,
1 tsp Coriander seeds,
inch Mace,
Salt to taste,

For Filling
2 no. Green chillies, finely chopped,
1 tbsp Tender coriander stem, finely chopped,
inch Ginger (peeled & finely chopped)
cup Hung curd,


Other Ingredients
4-5 Bread slice,
2 tsp Oil for shallow frying,
1 tbsp Butter, cubed,

For Garnish
Prepared Filling,
Mint chutney,
Onion rings,
Coriander sprig,
fresh Mint sprig,

Process
For Tempayy Kebab
In a lagan or kadai, add oil, once it's hot, add ginger, green chili and let it saute for a few seconds on moderate heat.
Add carrots, french beans and saute it well.
Add marinated natural tempayy and mix it well.
Add oil, salt to taste and cook it for 5-6 minutes on moderate heat.
Add water, cover it with the lid and cook it for a while until cooked well.
Mash the mixture with the help of masher or wooden spatula.
Add prepared masala and mix it well.
Transfer the mixture into a tray and keep it aside to cool down to room temperature.
Make lemon size balls and stuff the filling. Give it the desired shapes.
In a pan, add oil,, once it's hot, place the prepared kebabs and shallow fry until golden brown on both sides.
Transfer it onto a serving dish. Garnish it with green chutney, prepared filling, coriander sprig, mint sprig and sprinkle a pinch of degi red chili powder.
Serve hot.

For Masala
In a shallow pan, add black cardamom, cloves, black peppercorns, coriander seeds, mace, salt to taste and dry roast it for a minute.
Transfer it into a grinder jar and grind into a coarse powder.
Keep it aside for further use.

For Tempayy Marination
In a bowl, add natural tempayy, lemon juice, curd, ginger garlic paste, degi red chili powder, turmeric powder, coriander powder and mix it well.
Keep it aside for 10-15 minutes for marinating.

For Filling
In a bowl, add green chili, tender coriander stems, ginger, hung curd and mix everything very well.
Keep it aside for further use.

For Kebab Sandwich
Take the bread slices, add the prepared filling and spread it well.
Place another bread slice and make a sandwich.
Apply butter in the toaster, place sandwiches and toast it well.
Cut it into half and place it in a serving dish, garnish it with green chutney, hung curd, onions rings, coriander sprig.
Serve hot.
