In a blender jar, add rolled oats and blend to a powder. Add cashew nuts, pumpkin seeds, ginger powder, rock salt, cinnamon powder and blend to a fine powder.2. Add dates, vanilla extract and blend till well combined. Transfer into a large bowl.3. Add raisins and mix well. To make the cookies, take a small portion of the mixture and shape it into a ball and slightly flatten it.4. Press in the centre of the cookie to make a cavity using your thumb, place cashew nut on it and press it.5.
