Spicy gravy with tender pieces of yam cooked till perfection.

VEGAN YAM FISH CURRY

Ingredients

250 grams yam (suran)
2 medium onions
2-3 dried red chillies
¼ tsp fenugreek seeds (methi dana)
½ cup scraped fresh coconut
1 tsp mustard seeds
1 tbsp finely chopped garlic
½ inch ginger, finely chopped
¼ tsp turmeric powder
Rock salt to taste
2-3 kokum petals
Fresh coriander sprig for garnish

Method

1. Slice yam and remove the skin. Chop into 1 inch cubes and steam till soft. Set aside.
2. Slice onions and set aside.
3. Dry roast dried red chillies and fenugreek seeds till fragrant. Add sliced onions and sauté till translucent.
4. Add scraped fresh coconut and sauté till the onion turns golden brown. Take the pan off the heat. Allow to cool slightly.
5. Transfer the prepared mixture into a blender jar and add ¼ cup water and blend to a fine paste.
6. Heat an earthen pot and add mustard seeds and let them splutter. Add garlic and ginger and saute for a minute.
7. Add the prepared paste, turmeric powder and rock salt and stir well. Add 2 cups water, mix and cook till the mixture comes to a boil.
8. Add kokum petals and mix well. Cook for a minute. Add steamed yam and mix. Cook for 1-2 minutes.
9. Transfer into a serving bowl, garnish with coriander sprig and serve hot.
