VEGAN yogurt made with peanut milk, no dairy products is absolutely healthy and as creamy as regular dahi.

VEGAN YOGURT

Ingredients

1 cup raw peanuts
½ brown rice
8-10 green chillies

Method

1. Take raw peanuts in a large bowl, add sufficient water and soak 6-8 hours.
2. Take brown rice in a blender jar and blend to a fine powder. Transfer into a bowl and set aside.
3. Drain and add the soaked peanuts into a blender jar, add 100 ml water. Blend well. Add 500ml water and blend till smooth.
4. Transfer the prepared mixture into a pan and place it on heat. Let it come to a boil, stirring occasionally.
5. Mix 200ml water with the ground brown rice powder and continuously mixing. Cook till it thickens slightly. Allow to cool slightly.
6. Transfer into earthen pots, break the tops of green chillies and place 4-5 them on top of each mixture. Allow to ferment for 6-8 hours at room temperature.
7. Serve as required.
