These bhajiyas will leave you drooling for more!VEGETABLE BHAJIYAIngredients1 cup grated yellow squash1 cup grated green zucchini1 cup grated carrot½ cup grated beetroot1 large onion, sliced¾ cup grated cabbageSalt to taste1/3 cup gram flour (besan)¾ cup refined flour (maida)½ cup bread crumbsCrushed black peppercorns to taste2 tbsps chopped fresh coriander leaves2-3 green chillies, choppedOil for shallow frying Mint-yogurt to serveMethod1. Take squash in a large bowl, add zucchini, carrot, beetroot, onion, cabbage and salt and mix well. Set aside for 10 minutes.2. Add gram flour in the vegetable mixture, add refined flour, bread crumbs, crushed black peppercorns, coriander leaves, and green chillies and mix well. 3. Heat sufficient oil in a non-stick pan. Add small portion of the mixture into it, lightly spread it to form a small disc and shallow fry for 1-2 minutes on each side. Drain on an absorbent paper. 4.
