Made with a mix of exotic vegetables like zucchini, yellow squash, carrots and beetroots, mixed with gram flour and shallow-fried to perfection. These bhajiyas will leave you drooling for more!
VEGETABLE BHAJIYA

Ingredients

1 cup grated yellow squash
1 cup grated green zucchini
1 cup grated carrot
½ cup grated beetroot
1 large onion, sliced
¾ cup grated cabbage
Salt to taste
1/3 cup gram flour (besan)
¾ cup refined flour (maida)
½ cup bread crumbs
Crushed black peppercorns to taste
2 tbsps chopped fresh coriander leaves
2-3 green chillies, chopped
Oil for shallow frying
Mint-yogurt to serve

Method

1. Take squash in a large bowl, add zucchini, carrot, beetroot, onion, cabbage and salt and mix well. Set aside for 10 minutes.
2. Add gram flour in the vegetable mixture, add refined flour, bread crumbs, crushed black peppercorns, coriander leaves, and green chillies and mix well.
3. Heat sufficient oil in a non-stick pan. Add small portion of the mixture into it, lightly spread it to form a small disc and shallow fry for 1-2 minutes on each side. Drain on an absorbent paper.
4. Serve hot with mint-yogurt.
