Delicious burgers made especially for vegetariansVEGETABLE BURGERSIngredients4 burger buns ½ cup boiled kidney beans (rajma)1 medium onion, roughly chopped1 medium green capsicum½ boiled beetroot, peeled and roughly chopped1 cup cooked brown rice Salt to taste½ cup dried breadcrumbs 4 tbsps olive oil 4 cheese slicesTomato ketchup, as required4 iceberg lettuce leavesMethod1. Put kidney beans in a chopper jar. Add onion. 2. Roughly chop green capsicum and add. Add beetroot and brown rice, chop everything roughly and transfer into a large bowl. Add salt and breadcrumbs.3. Heat oil in a non-stick pan. 4. Mix well all the ingredients in the bowl. Divide into equal portions and shape them into burgers to suit the size of the buns.5. Cook them in the pan on medium heat. When the underside turns crisp, turn them over and cook till the other side is evenly crisp.6. Halve the buns and heat them on a non-stick tawa. 7. Keep a cheese slice on each burger. 8. Apply tomato ketchup on each burger half. Keep a piece of iceberg lettuce over all the base halves of the buns.9. Now keep a burger on each and cover with the top half of the bun. 10.
