Frankies are an all-time favourite amongst kids and adults both. This vegetable frankie loaded with veggies and a delicious potato tikki is going to be a saviour on days when you feel too lazy to cook!

VEGETABLE FRANKIE

Ingredients

2-3 medium potatoes, boiled, peeled and mashed
1 medium carrot, grated
¼ cup mashed green peas
4 medium refined flour rotis
1 tbsp chopped fresh coriander leaves
2 green chillies, finely chopped
3-4 tsps vinegar
½ inch ginger, finely chopped
1 tsp dried mango powder + for sprinkling
Salt to taste
Oil for shallow-frying
Semolina for coating
1 medium onion, cut into roundels and separated into rings

Method

1. Take potatoes in a bowl. Add carrots and green peas and mix. Add coriander leaves and half the green chillies.
2. To prepare chilli-vinegar, take remaining green chillies in another bowl. Add vinegar and mix well.
3. Add ginger, 1 tsp dried mango powder and salt to potato mixture and mix well.
4. Heat some oil in a non-stick pan.
5. Divide the potato mixture into equal portions, shape them into seekh kababs and lightly flatten from 2 opposite sides.
6. Coat the prepared kababs with semolina, place them in the pan and shallow-fry from all sides till golden and crisp.
7. Heat a non-stick tawa and warm each roti from both the sides. Transfer on the worktop.
8. Place 1 kabab in the center of each roti and lightly flatten to crush. Sprinkle some dried mango powder and place few onion rings on top.
9. Drizzle some chilli-vinegar on top, fold the roti from 2 opposite sides and roll.
10. Serve hot.
