Quick and simple to make, this veggie nugget is a great evening snack!VEGETABLE NUGGETIngredients 2 medium potatoes, boiled, peeled and grated¾ cup grated cauliflower¼ cup finely chopped green capsicum¼ cup finely chopped carrots¼ cup finely chopped French beans¼ cup finely chopped fresh coriander leaves ¼ cup dried breadcrumbs1 teaspoon cumin (jeera) powder1 teaspoon chaat masala1 teaspoon coriander powder½ teaspoon garam masala powder 1 teaspoon red chilli powderSalt to taste 1 teaspoon crushed black peppercorns 2-3 tablespoons cornflourOil for deep-fryingPanko breadcrumbs for coatingMethod1. Mix together potatoes, cauliflower, capsicum, carrots, French beans, coriander leaves, breadcrumbs, cumin powder, chaat masala, coriander powder, garam masala powder, chilli powder, salt and crushed peppercorns in a bowl. 2. Divide the prepared mixture into equal portions and shape into nuggets. 3. Mix together cornflour and water as required into thin slurry. 4. Heat sufficient oil in a kadai. 5. Dip the nuggets in slurry and coat with panko breadcrumbs.6. Deep-fry nuggets in hot oil till golden brown. Drain on absorbent paper. 7. Serve hot with tomato ketchup.
