The addition of walnuts gives a special twist to the flavourful pilaf with lots of fresh vegetables.VEGETABLE PILAF Ingredients ¼ cup finely chopped carrots½ cup small cauliflower florets, boiled with turmeric powder 8-10 French beans, finely chopped 1½ cups Basmati rice, soaked 1 tablespoon olive oil 2 tablespoons butter 1 bay leaf 10-12 black peppercorns 1 tablespoon finely chopped garlic 1 medium onion, chopped6-8 walnut kernels 1 tablespoon chopped fresh parsley Salt to taste Fresh parsley sprig for garnishing Method 1. Heat olive oil and butter in a deep non-stick pan. Add bay leaf, peppercorns, garlic and onions. Sauté till fragrant and translucent. 2. Add carrots, cauliflower and French beans, mix and cook for 2-3 minutes. 3. Add rice, 3 cups water, walnuts, parsley and salt, stir to mix, cover and cook till fully done. 4.
