An easy, healthy and delish snack prepared with poha, fresh vegetables and air-fried to perfection.
VEGETABLE POHA CUTLETS

Ingredients

1 cup pressed rice (poha)
1 medium potato, boiled
3-4 French beans, finely chopped
1 small carrot, finely chopped
1 small onion, finely chopped
½ cup purple cabbage, chopped
2 tbsps green capsicum, chopped
3-4 green chillies, finely chopped
Crushed black peppercorns to taste
½ tsp sugar
1½ tbsps roasted coriander, coarsely crushed
½ tbsps roasted cumin powder
Salt to taste
¼ cup chopped fresh coriander leaves
2 tbsps finely chopped mint leaves
Oil for greasing
Sauce
2 tbsps tomato ketchup
1 cup yogurt
Crushed peppercorns to taste
Salt to taste
Chaat masala for sprinkling
Lemon slices for garnish
Fresh coriander sprig for garnish

Method

1. Wash the poha and set aside.
2. Grate potato in a bowl, add poha and mix well. Add French beans, carrots, onions, purple cabbage, capsicum, green chillies, crushed black peppercorns, sugar, crushed coriander seeds, roasted cumin powder, salt, chopped coriander and mint, mix well.
3. Grease your hands with oil and shape the mixture into cutlets and air fry for 10-15 minutes at 200ºC.
4. For sauce take ketchup in a small bowl, add yogurt, crushed black peppercorns and salt, whisk well.
5. Transfer the cutlets in a serving plate. Sprinkle some chaat masala on top. Garnish with lemon slices and coriander sprig on top, serve hot with the prepared sauce.
