An easy, healthy and delish snack prepared with poha, fresh vegetables and air-fried to perfection.VEGETABLE POHA CUTLETSIngredients1 cup pressed rice (poha)1 medium potato, boiled3-4 French beans, finely chopped1 small carrot, finely chopped1 small onion, finely chopped½ cup purple cabbage, chopped 2 tbsps green capsicum, chopped 3-4 green chillies, finely choppedCrushed black peppercorns to taste½ tsp sugar1½ tbsps roasted coriander, coarsely crushed½ tbsps roasted cumin powderSalt to taste¼ cup chopped fresh coriander leaves2 tbsps finely chopped mint leavesOil for greasingSauce2 tbsps tomato ketchup1 cup yogurtCrushed peppercorns to tasteSalt to tasteChaat masala for sprinklingLemon slices for garnishFresh coriander sprig for garnishMethod1. Wash the poha and set aside.2. Grate potato in a bowl, add poha and mix well. Add French beans, carrots, onions, purple cabbage, capsicum, green chillies, crushed black peppercorns, sugar, crushed coriander seeds, roasted cumin powder, salt, chopped coriander and mint, mix well. 3. Grease your hands with oil and shape the mixture into cutlets and air fry for 10-15 minutes at 200ºC.4. For sauce take ketchup in a small bowl, add yogurt, crushed black peppercorns and salt, whisk well.5. Transfer the cutlets in a serving plate. Sprinkle some chaat masala on top.
