You can get a full course meal packed into one bowl with this spicy, tasty and aromatic vegetable pot rice.VEGETABLE POT RICEIngredients½ medium yellow squash, cut into diamonds½ medium green zucchini, cut into diamonds1 medium carrot, peeled and cut into diamonds3-4 button mushrooms, quartered4-5 dried shitake mushrooms, soaked, drained and halved1 cup mixed coloured capsicum triangles3 cups boiled basmati rice2 tbsps oil1½ tbsps finely chopped garlic1½ tbsps finely chopped ginger1 tbsp finely chopped celery stalk2-3 spring onion, diagonally slicedSalt to tasteCrushed black peppercorns to taste1 tbsp soy sauce1 tsp red chilli sauce1½ tsps oyster sauce2 cups vegetable stock4 tbsps corn flour slurry7-8 fresh bok choi leaves, torn1 spring onion green, cut into 1 inch pieces + for garnishMethod1. Heat oil in a non-stick deep pan, add garlic, ginger, celery stalk and sauté for 1 minute.2. Add spring onion and sauté well. Add yellow squash, green zucchini, carrot, button mushrooms, shitake mushrooms and sauté for 1-2 minutes.3. Add capsicums and sauté. Add salt, crushed black peppercorns, soy sauce, red chilli sauce and mix well. 4. Add oyster sauce, mix well. Add vegetable stock, 1½ cups water and mix well. Cover and cook for 2-3 minutes. 5. Add corn flour slurry and mix well. Cook till the mixture thickens. 6. Add bok choi and mix. Add basmati rice and mix well. Cook for 1 minute.7. Add spring onion greens and take the pan off the heat. 8.
