Quesadillas is a Mexican snack that is also treated as an appetizer in restaurant menus. Quesadillas are delicious and tummy filling, they make a perfect irresistible snack. So with Anushruti learn to make Quesadillas only on Rajshri Food.

Ingredients:
4 large (8” or 9”) flour Tortillas
Vegetable oil for cooking

For stuffing:
200 gm -300 gm Monterey Jack Cheese or Sharp Cheddar cheese (add more cheese for a tastier version)
2 bell peppers* (chopped fine)
2 tomatoes, chopped
10 to 12 black olives
1 cup cooked corn or 1 tin canned yellow corn
olive oil
smoked paprika
pepper
salt

Method:
Pre heat the oven at 200C/400F.

In a baking tray, put in the vegetables, bell pepper, tomatoes, olives and corn. Put in salt, pepper and paprika. Drizzle with olive oil and toss well. Put in the oven for 10 to 12 minutes. After the vegetables are out of the oven, allow to cool down for a few minutes.

Heat a frying pan over medium heat. Mix the vegetables with the cheese.

Divide the stuffing into 4 equal portions. Take a tortilla and place a portion of the mixture over one half of the tortilla.

Fold the tortilla covering the mixture into a half moon shape. Place this on the moderately hot pan and smear a little oil over the tortilla.Press the tortilla slightly for a few seconds and allow the cheese to melt.

Flip the quesadilla to the other side and smear some oil over it. Cook until nice brown spots appear and the quesadilla is slightly crisp.

Take care of the heat source for the pan so as to not to blacken the tortilla. Cut into triangles.

Serve with lettuce, salsa, sour cream or guacamole.

*Use only one bell pepper if the bell pepper is big.

Makes 4 Quesadillas

* Tortilla recipe
1 cup whole wheat flour
2 tbsp vegetable oil
½ tsp salt
¼ cup warm water

Method: Mix all the above ingredients and make into dough. Divide into 4 parts. On a floured, clean surface roll into a circle. Lightly cook on a griddle or in a frying pan and use as required.

Guacamole
Serve guacamole with your favourite veggies or tortilla chips.

Ingredients:
2 large avocados or 4 small
1 tbsp jalapeno, chopped
3 to 4 tbsp sour cream/fresh cream and lime juice
pepper
salt
paprika for dusting

Method:
Cut, the avocado lengthwise, deseed and scoop out the flesh. Mash a little. Put in the jalapeno, sour cream, salt and pepper and mix well.

Dust with the paprika.

Fresh Tomato Salsa

Ingredients:
3 tomatoes, chopped
1 green chili, chopped
1 jalapeno. chopped
1/2 cup fresh coriander leaves
salt
pepper
lime juice

Method:
In a bowl, put in all the ingredients, tomatoes, green chili, jalapeno, fresh coriander and mix well. Stir in salt, pepper and lime juice. Mix well.
