Vegetarian Skillet Lasagna | SanRemoPasta

Vegetarian Skillet Lasagna (Serves 4)
Difficulty: 1- Easy
Preparation Time: 10 minutes
Cooking Time: 30 minutes

Ingredients-
6 San Remo Traditional Lasagna sheets
4 tbsp olive oil
1 onion
2 garlic cloves
1 medium eggplant, cut into 1cm cubes
1/4 cup red split lentils
1 tinned tomato
1 bay leaf
12 baby bocconcini
100g mozzarella
20g parmesan
basil for garnish
sea salt & cracked black pepper

Method-
1. Heat skillet over high heat and, cooking in batches, add 1 tbsp olive oil and cook eggplant until browned. Set aside.
2. Add onion and sauté until softened.
3. Add garlic, cook for 1 minute and then add lentils, stir.
4. Add tinned tomato, 1 can water and bay leaf.
5. Bring to the boil, season with salt & pepper, turn down heat, simmer until lentils are cooked, about 20 minutes.
6. Add broken lasagna sheets, cook until tender, about 10 minutes.
7. Add the baby bocconcini and press them in to submerge.
8. Top with mozzarella and parmesan and place under a grill until melted and golden.
9. Garnish with basil and cracked black pepper.
