VEGGIE QUESADILLAIngredients 2 tablespoons finely chopped mixed capsicums ¼ medium green zucchini, finely chopped¼ small broccoli, cut into small florets and blanched2-3 tablespoons boiled corn kernels8 whole wheat flour (atta) rotis 1 tablespoon olive oil + as requiredBlack pepper powder to taste 1 teaspoon paprika Salt to taste1 pickled jalapenos, sliced¼ cup grated processed cheese + as requiredSalsa for servingMethod1. Heat 1-2 pieces of coal directly on flame. 2. Heat 1 tablespoon olive oil in a non-stick pan. Add mixed capsicums, zucchini, broccoli florets and corn kernels and sauté for 1 minute. 3. Add pepper powder, paprika and salt and sauté for 1 minute. Transfer in a bowl.4. Add jalapenos and ¼ cup cheese on top. 5. Make a cavity in the center of the bowl. 6. Place a small steel bowl in the center of the vegetable bowl. Put the hot coal pieces in the steel bowl, drizzle some olive oil on top and immediately cover the vegetable bowl with two aluminium foil. Set aside for 5-10 minutes. Remove the steel bowl. 7. Mix the smoked vegetable mixture well. 8. Heat a non-stick tawa and grease with some oil. 9. To prepare one quesadilla, spread some smoked vegetable mixture and some cheese on one roti and cover with another roti. 10. Place the quesadilla on hot tawa and roast from both sides till golden brown and crisp. 11. Cut into wedges and serve hot with salsa.
