Vietnamese Rice Paper Roll | Sanjeev Kapoor Khazana

Fresh cut vegetables wrapped in rice paper roll and served. Perfect summer snacking.

VIETNAMESE RICE PAPER ROLL

Ingredients

4 rice paper rolls
½ bunch lettuce
½ cup red capsicum, cut in strips
½ cup carrot, cut in strips
½ cup cucumber, cut in strips
½ cup asparagus, cut in strips
Salt to taste
Crushed black pepper to sprinkle
Black sesame seeds to sprinkle
Sweet chilli sauce to serve


Method

1. Dip the rice paper roll in warm water and transfer to the work top immediately.
2. Place a lettuce leaf on the rice paper roll and top it with 2-3 pcs of capsicum, carrot, cucumber and asparagus each lengthwise.
3. Sprinkle salt, pepper and sesame seeds on the placed vegetables.
4. Fold two sides of the rice paper sheet inwards, sealing the edges and roll into a cylinder.
5. Cut into two halves and serve cold with sweet chilli sauce.
