Brinjal slices marinated with walnut and spices paste, coated with bread crumbs and deep fried.WALNUT CRUSTED BRINJALIngredients 2 long brinjals 4-5 California Walnuts, halved3 green chillies5-6 garlic cloves1 inch ginger5-6 fresh coriander sprigsSalt to tasteJuice of ½ lemonOil for deep-frying¾ cup fresh breadcrumbsCherry tomatoes for garnishingGreen capsicum strips for garnishingMethod1. Cut the end and stem of brinjals. Halve horizontally and cut each half vertically into 3 pieces. Transfer in a bowl. 2. Blend together green chillies, garlic, ginger, coriander sprigs, California Walnuts and salt into a paste. Add 1-2 tbsps water and blend to a smooth paste. 3. Add lemon juice and prepared paste to brinjals pieces and mix well. Set aside to marinate for 10 minutes. 4. Heat sufficient oil in a kadai. 5. Spread some breadcrumbs on a plate and coat each brinjal piece with it.6. Deep-fry the brinjals pieces in hot oil till golden brown and crisp. Drain on absorbent paper. 7.
