Marinated chicken pieces coated with breadcrumb and walnut mixture, deep fried to perfection.

WALNUT CRUSTED CHICKEN BITES

Ingredients

1 cup walnuts
250 grams boneless chicken breasts, sliced into 1 inch pieces
Salt to taste
Crushed black peppercorns to taste
1 teaspoon paprika
1 tablespoon Tabasco sauce
½ teaspoon red chilli flakes
1 teaspoon mixed dried herbs
1½ teaspoons onion powder
1½ teaspoons garlic powder
1 tablespoon olive oil
¾ cup panko crumbs
1 egg
Oil for deep-frying

Method

1. Put chicken slices in a bowl. Add salt, crushed peppercorns, paprika, Tabasco sauce, chilli flakes, mixed herbs, onion powder, garlic powder and olive oil, mix well and set aside to marinate for 30 minutes.
2. Grind walnuts to a coarse powder and put in a bowl. Add panko crumbs, salt and crushed peppercorns and mix.
3. Break egg on marinated chicken and mix well.
4. Coat chicken slices with walnut-panko mixture.
5. Heat sufficient oil in a kadai. Deep-fry chicken slices till golden brown. Drain on absorbent paper.
6. Serve hot with your choice of sauce.
