Watermelon roundels soaked in thickened orange juice, pierced with toothpicks and topped with cheese slice.WATERMELON LOLLIPOPIngredients½ medium watermelon2 cups orange juiceSalt to taste1 cheese sliceA few fresh parsley sprigsMethod1. Cut the watermelon into ½ inch thick discs.2. Pour orange juice into a non-stick pan and heat till it reduces slightly.3. Remove the seeds of the watermelon. Place a small round cutter on the watermelon slices and cut small roundels.4. Add salt to the orange juice and continue to cook till it thickens. Pour into a bowl and set aside to cool.5. Soak the watermelon roundels in it and keep it in the refrigerator.6. Cut a cheese slice into ½ cm wide slices and halve each slice.7. Wrap a block of thermocole with aluminium foil and keep it on a serving plate. 8. Bring the watermelon roundels out of the refrigerator and skew them on small satay sticks to look like lollypops. Then pierce them on the thermocole block.9. Place a cheese slice on each watermelon lollypop and place a small parsley sprig over them.10.
