I had some leftover fried rice on hand and decided to make a nice little lunchbox out of it! Just roll them into balls about the size of a large gum-ball and pick your favorite option or do all three!.Option 1:Coat the balls in breadcrumbs, spray with a little cooking oil, and place in the air fryer at 400F for 25 minutes, until golden brown.Option 2:Place the balls into tofu pockets. Supplement with additional rice if you want to make them very chubby. :)Option 3:Mix together 2 tsp of Fishy Salt and tear up some roasted seaweed. Coat the rice balls with fishy mixture.Enjoy!Joanne Lee Molinaro is a Korean American trial lawyer, New York Times best-selling author, James Beard Award-winner, and host of the Are You Ready podcast.
