White Dhokla | Sanjeev Kapoor Khazana

This recipe needs no introduction as it is one of the most popular snack from the Gujarati cuisine. Do try to make this at home.

WHITE DHOKLA

Ingredients

1 cup rice
¼ cup split skinless black gram (dhuli urad dal)
¼ cup sour yogurt
Salt to taste
1 inch ginger, roughly chopped
2-3 green chillies, finely chopped
½ teaspoon baking soda
1 tablespoon lemon juice
2 tablespoons oil + for greasing
Chopped fresh coriander leaves for garnishing
Tempering
1 tablespoon oil
1 teaspoon mustard seeds
2 green chillies, slit
10-12 curry leaves
½ teaspoon asafoetida (hing)

Method

1. Dry roast rice and black gram on medium heat for 4-5 minutes. Cool and grind into a coarse powder.
2. Put the powder in a bowl. Add yogurt, 1½ cups warm water and salt. Mix well and ferment for 8-10 hours.
3. Blend together ginger and green chillies with water as required to a fine paste.
4. Add paste to the fermented batter alongwith baking soda and lemon juice and whisk well. Add oil and whisk well.
5. Heat sufficient water in a steamer. Grease a thali with some oil.
6. Pour batter on the greased thali and steam for 8-10 minutes. Remove from heat and cut into squares.
7. For the tempering, heat oil in a non-stick pan. Add mustard seeds and sauté till they splutter. Add green chillies, curry leaves and asafoetida, mix well and sauté for 15 seconds.
8. Pour tempering over dhokla pieces, garnish with coriander leaves and serve immediately.
