Sure, it's strange to look at, but every part of this bird can be used to make struggle meals for the week, starting with chicken lettuce cups and buttermilk fried chicken.Oven Fried ChickenINGREDIENTS:1 lemon, juiced = $.501 cup milk = $.142 drumsticks and 2 wings = $1.98Salt = pennies1 cup flour = $.251/4 cup vegetable oil = $.102 russet potatoes, cubed = $.49STEPS: 1.) To make buttermilk, add lemon juice to milk and stir. Let sit for 15 minutes.2.) In a large bowl, pour buttermilk over chicken. Cover with plastic wrap, and place in the fridge to marinate for 30 minutes to 24 hours.3.) Preheat oven to 350 degrees.4.) In a cast-iron skillet over medium heat, add vegetable oil. Take chicken out of fridge and remove from buttermilk. Sprinkle with salt, then dredge in flour. 5.) Carefully place chicken in hot oil and brown well on both sides. Add cubed potatoes to the pan and toss in oil. 6.) Transfer skillet to oven and bake for 30 minutes. Allow cooling slightly before serving.Chicken Breast Lettuce CupsINGREDIENTS:2 chicken breasts = $1.982 tablespoons olive oil, divided = $.50Salt = pennies3 tablespoons soy sauce (from packets) = free2 tablespoons vinegar = $.222 tablespoons sugar (from packets) = free1 scallion, sliced = $.171 carrot, shredded = $.201 packet mustard = free1/2 head iceberg lettuce = $1.00STEPS:1.) Preheat oven to 400 degrees. Drizzle chicken with 1 tablespoon olive oil and sprinkle with salt. Add chicken to a cast-iron pan, and bake for 25 minutes. Remove from oven and let cool.2.) In a large bowl, add soy sauce, sugar, vinegar, remaining olive oil, scallions and carrots. Toss to combine.3.) Cut chicken into cubes, and add to the bowl along with the mustard packet. Stir to combine. Serve chicken mixture inside iceberg lettuce cups, topped with more soy sauce.Perfect Crispy SkinINGREDIENTS:2 chicken thighs = $1.982 tablespoons olive oil, divided = $.50Salt = pennies4 carrots, with tops = $.992 tablespoons butter, cubed = $.221/2 lemon, juiced = $.251 clove garlic, finely chopped = $.061 packet honeySTEPS:1.) Preheat oven to 400 degrees.2.) Sprinkle chicken with salt and drizzle with 1 tablespoon olive oil. 3.) Add chicken to pan, skin side down, and sear until crispy and brown. Remove carrot tops and reserve. Flip chicken over, then add whole carrots to the pan. Top chicken and carrots with cubed butter. 4.) Transfer pan to the oven, and bake for 20 minutes.5.) In a small bowl with a lid, combine lemon juice, garlic, salt, remaining olive oil and honey. Close tightly and shake until combined.6.) Finely chop carrot tops and toss with the dressing.7.)
