1. Pre-heat oven to 350*F. 2. Toss cherries with granulated sugar and place in an ovenproof dish. 3. Combine flour, ginger, cinnamon and Demerara sugar. 4. Using your fingertips (or the food-processor) rub butter into flour mixture until the mixture resembles coarse breadcrumbs. 5. Sprinkle mixture over fruit. 6. Bake at 350*F for 35-40 minutes or until golden. 7. Serve hot or cold with cream or custard. ---------------------------------------------------------------------------
