1. Heat olive oil in a medium skillet. 2. Add onion; lightly sauté 3. Add artichoke hearts & black olives. Cook for 5 minutes. 4. Add water, salt, pepper and thyme. Mix well. 5. Cook tortellini according to package directions. 6. Drain tortellini and add to skillet. 7. Add cream and parsley; heat on low for a few minutes to thicken. 8. Remove from stove and sprinkle with extra chopped parsley if desired. 9. Serve immediately. ---------------------------------------------------------------------------
