This Spinach Curry - Palak Paneer is really quick, easy and tasty. Make it for lunch and have leftovers for dinner. You can eat it with Roti, rice or with bread of your choice.

Ingredients and Method

300 gms of chopped frozen Spinach
350 gms of Paneer
oil for cooking
1 tsp each salt, chilli powder, turmeric, curry powder
1 tbsp each ginger- garlic
2 tbsp tomato paste
1 small chopped onion
1 tsp cumin seeds
1/2 tsp mustard seeds

Cilantro for garnish
optional- 2 tbsp cream
1/2 tsp garam masala

Method:
1. Fry cumin and mustard seeds in hot oil.
2. Add in onions, ginger , garlic after 30 secs.
3. Add in Paneer. Mix well.
4. Add in thawed spinach or microwaved spinach
5. Cook with curry powder for 4-5 mins
6. Add in tomato paste. Mix well and give another 2 mins before garnishing and serving.
Optional to add cream on top for additional creamy taste.
