#15 , : Honeykkis Home Cooking Episode, Burdock Root Rice Honeykki

Its been a while since the last Honeykkis home cooking episode.
As it is getting chilly outside, I have been craving a hearty pot rice.
And I made a simple shrimp soup and Zucchini side dish.
They are all simple, foolproof menus. Enjoy this hearty, filling meal.

* : burdock root rice (1cup = 200ml)

, 1/4, 2, 2

2cup rice soaked in water for 30min, a half handful of shaved burdock root
1/4 carrot, 2Tbs soy sauce, 2Tbs mirin, 1 1/2cup kelp water(soak kelp in cold water for 1 hour)

1. Shave the burdock as you would a pencil. And then, soak in diluted vinegar for 30min.

2. In a small pot, add soaked rice, water and mirin. Mix well and top with burdock shavings and carrot.

3. Bring to boil on high heat for about 5min, reduce to low heat and simmer for 15min.

4. Turn off and rest for 15min. Do not open the lid.

* : Saeu-jeot soup
1/2, 1/2, 1/2, 500ml,
1/2 soft tofu, 1/2 Korean zucchini, 1/2 onion, 500ml water or kelp water(soak kelp in cold water for 1 hour)
saeu-jeot(salted shrimp) to taste

1. Slice and quarter Korean zucchini and chop onion the same size as the zucchini.

2. In a pot, add water, soft tofu and zucchini, bring to boil and season with saeu-jeot.

You can add chili pepper or chili powder to taste.
