Today we are going to do a 1938 Depression Era recipe for Corn Flake Macaroons - or Corn Flake Meringue Cookie Recipe.Ingredients:2 egg whites175 mL (¾ cup) white sugar500 mL (2cups) Corn Flakes60 mL (¼ cup) chopped nutsPinch of salt5 mL (1 tsp) vanillaMethod:Preheat oven to 180ºC (350ºF).Beat the egg whites to stiff peaks.Add sugar and beat in, until smooth and glossy.Beat in vanilla.Fold in corn flakes and nuts.Drop by spoonfuls onto parchment lined baking sheet.Bake for 12-15 minutes.Allow to cool on a rack.Keep in an airtight container - thesis will lose their ‘crunch’ after a day or two.Le Gourmet TV Is Now - Glen & Friends Cooking!#LeGourmetTV #GlenAndFriendsCooking #OldCookbookShow
