1938 Corn Flake Macaroons Recipe Welcome friends! Welcome back to Sunday Morning and the Old Cookbook Show. Today we are going to do a 1938 Depression Era recipe for Corn Flake Macaroons - or Corn Flake Meringue Cookie Recipe.
Ingredients:
2 egg whites
175 mL (¾ cup) white sugar
500 mL (2cups) Corn Flakes
60 mL (¼ cup) chopped nuts
Pinch of salt
5 mL (1 tsp) vanilla

Method:
Preheat oven to 180ºC (350ºF).
Beat the egg whites to stiff peaks.
Add sugar and beat in, until smooth and glossy.
Beat in vanilla.
Fold in corn flakes and nuts.
Drop by spoonfuls onto parchment lined baking sheet.
Bake for 12-15 minutes.
Allow to cool on a rack.
Keep in an airtight container - thesis will lose their ‘crunch’ after a day or two.
