Types of Egg Curries
Ingredients :-
Ghoda Masala ;
Whole Garam Masala - 10 g
Red Chillies - 4-5
Pepper - 1 tsp
Fennel seeds - 1 tsp
Fenugreek seeds - 1/4 tsp
Coriander seeds - 1 tsp
Grated Coconut - 1 tsp
Curry Leaves - 1 tsp
Onions - 1 tsp
Ginger Garlic Paste - 1 tsp
Turmeric Powder - 1 tsp
Tomato Puree - 1 cup
Tamarind Juice - 1 cup
Sugar - 1 tsp
Eggs (Boiled) - 3
Oil - As Required
Salt - As Required
Method :-
Heat a pan add Whole Garam masala, red chillies , pepper and roast it for a minute and now add fennel seeds , fenugreek seeds , cumin seeds , biryani phool , poppy seeds , coriander seeds , grated coconut , curry leaves and roast it on a slow flame for 5 minutes and switch off the flame.
Transfer it into a blender and grind it into fine powder and keep it aside.
Heat oil in a pan add onions , salt and fry it till it turns golden brown colour , now add ginger garlic paste , turmeric powder saute it nicely.
Add Black masala powder , water and it for 10 minutes on a slow flame then add tamarind juice and finish it with sugar and transfer it to a bowl and add boiled eggs.

Telangana Style Egg curry :-
Ingredients :-
Eggs - 3
Red Chillies - 4-5
Mustard seeds - 1 tsp
Methi seeds - ¼ tsp
Onions - 1 Cup
Curry Leaves - 2 Strings
Ginger Garlic paste - 1 tsp
Turmeric Powder - 1 tsp
Chilli Powder - 1 tsp
Coriander Powder - 1 tsp
Cumin Powder - 1 tsp
Garam Masala - 1 tsp
Tamarind pulp - 1 cup
Water - As Required
Sugar - 1 tsp
Coriander (Chopped) - For Garnish
Oil - As Required
Salt - To Taste
Method :-
Heat oil in a pan add red chillies , mustard seeds , cumin seeds , fenugreek seeds , after frying them add onions , curry leaves , some salt cook it till it turns golden brown add some ginger garlic paste , turmeric powder , chilli powder , coriander powder , cumin seed powder , Garam masala , tamarind juice and mix it well and add water and boil , some salt , some sugar , chopped coriander leaves.
In the last add Eggs and serve it hot with Rice.

Chennai Style : -
Eggs - 3
Cumin Seeds - 1 tsp
Red Chillies (gundu) - 4-5
Sambar Onions - ½ cup
Ginger Garlic - 1 tsp
Tomatoes - 1 Big cup
Chilli Powder - 1 tsp
Coriander Powder - 1 tsp
Onions - 1 cup
Coconut paste - 1 cup
Oil - As Required
Salt - To Taste
Water - As Required
Method :-
Heat oil in a pan add mustard seeds , cumin seeds , red chillies , sambar onions , garlic , onions , turmeric powder , ginger garlic paste , curry leaves , chilli powder , coriander powder and mix it well
Now add tomatoes & water, let it cook for some time.
In the last add fresh coconut paste and add eggs. Serve it with hot rice.
