4-Ingredient Nesquik Coconut Ice

FULL RECIPE

Serves 100
Hands-on time: 30 minutes
Hands-off time: 3 hours

INGREDIENTS

2 cups icing sugar
3 cups fine desiccated coconut
1 tin (385g) NESTL Full Cream Sweetened Condensed Milk
cup NESTL Nesquik Strawberry Flavoured Drink
cup NESTL Nesquik Chocolate Flavoured Drink

METHOD

1. Line a medium square baking dish, with baking paper.

2. Sieve 2 cups of icing sugar in a large mixing bowl. Add in the coconut, 1 tablespoon of water and the NESTL Full Cream Sweetened Condensed Milk, stir until combined.

3. Divide the mixture into 3 batches.

4. Add the remaining cup of icing sugar to the first batch and use your hands to combine lightly before kneading on a clean surface until fully combined.

5. Add NESTL Nesquik Strawberry Flavoured powder to the second batch and use your hands to combine lightly before kneading on a clean surface until fully combined.

6. Add the NESTL Nesquik Chocolate Flavoured powder to the third batch and use your hands to combine lightly before kneading on a clean surface until fully combined.

7. To layer the coconut ice, place the chocolate mixture into the bottom of the prepared dish. Using your hands, press the mixture in evenly.

8. Place the white coconut mixture on top. Using your hands, press the mixture in evenly.

9. Add the strawberry layer. Using your hands, press the mixture in evenly.

10. Cover the dish with plastic wrap and refrigerate for 2-3 hours or until set.

11. Cut into squares and ENJOY! *Chefs Tip: These make for a perfect lunchbox treat - for that extra boost of energy!
