Todays menu is hobak-pyeonsu.
Pyeonsu means summer dumpling. Use a lot of vegetables like zucchini, mushroom, etc. It taste clean and light.
There are many ways of making hobak-pyeonsu. Today I used my moms recipe.
Unlike other dumplings, we dont make soup with pyeonsu; we steam or pour cold broth over it.

* Ingredients (35~40 )
: 2, 5~6. 1/2 / 200g, 1/2 , 1/2 ,

( ) : 300g , ( 1/2 , 150ml), 1/2

Filling: 2 zucchini, 5 shiitake mushroom, 1/2Tbs salt / 200g minced beef, 1/2Tbs chopped garlic, 1/2Tbs soy sauce, pepper
1 green onion, 2 hot pepper, 1/2Tbs chopped garlic, 1/2Tbs red pepper powder, salt & pepper to taste, sesame oil & sesame seeds

Wrapper: 300g bread flour or all purpose flour, salt water(1/2tsp salt, 150ml water), 1/2Tbs sesame oil or vegetable oil

Dip sauce: 3Tbs soy sauce, 2Tbs vinegar, 2~3Tbs water, sesame oil, red pepper powder

1. Julienne zucchini and mushroom, add salt and leave for 10min.
Season beef with soy sauce, pepper and chopped garlic.

2. Drain zucchini and mushroom.

3. In a bowl, mix beef, zucchini, mushroom and the rest of the filling ingredients.
(chopped garlic, spring onion, hot pepper, red pepper powder, salt, sesame oil and sesame seeds.)

4. In a large bowl, mix flour, sesame oil and salt water and knead until smooth. rest for 30min

5. Split the dough in half, roll the dough into a thick rope, slice into chunks. Roll the chunks into round wrappers.
You can roll individual wrapper like in the video, or you can roll the entire dough and cut rounds using a cutter.
The latter would be easier if you have a flat pasta roller.

6. Make dumpling by wrapping around filling in any shape you like.

7. Steam for 10min. Serve with soy sauce dip.
