INGREDIENTS

box (225g) Ouma Yum Yum Caramel Dreams Rusks
cup (113g) melted butter
1 tub (230g) cream cheese
cup (125g) Yum Yum Caramel Dreams Crunchy Peanut Caramel Spread
cup (56g) castor sugar

Serving suggestion:
Salted peanuts, chopped
Tea

METHOD

1. Prepare a 20cm square baking dish with baking paper and add a light layer of non-stick cooking spray.
2. Add the Ouma Yum Yum Caramel Dreams Rusks into a plastic resealable bag and lightly bash with a rolling pin to form fine crumbs.
3. Transfer the crushed rusks to the prepared baking dish. Add the melted butter and stir the mixture until the crumbs are well coated. Gently press the crushed rusks to form a compact base.
4. In a large mixing bowl, add the cream cheese, Yum Yum Caramel Dreams Crunchy Peanut Caramel Spread and sugar. Using an electric mixer, whisk the ingredients together for 1-2 minutes until smooth and airy. *Chefs Tip: Replace with smooth cottage cheese for a more affordable option!
5. Transfer the filling to the baking dish, spreading the filling evenly over the rusk base and sprinkle the optional chopped peanuts over the filling, to garnish.
6. Refrigerate the cheesecake for 2 hours, or overnight for best results. *Chefs Tip: Prepare the cheesecake the day before for easy-peasy entertaining!.
7. Once set, remove the cheesecake from the fridge and carefully cut the cheesecake into even squares.
8. Serve on a cake stand with tea and ENJOY!
