INGREDIENTS

cup smooth peanut butter
2 cups Kellogg's All-Bran Flakes
cup honey
1 cup plain yoghurt

For the cranberry bran bites:
cup dried cranberries, finely chopped

For the strawberry jam bran bites:
cup strawberry jam

Serving suggestion:
Fresh berries

*Microwave cooking times may vary due to wattage; use the timings below as a guide.

METHOD

1. Lightly grease a 32-hole ice tray using cooking spray and set aside.
2. Add the peanut butter to a large heat-proof mixing bowl and microwave for 30-45 seconds or until a thin and silky consistency is achieved.
3. Add the Kellogg's All-Bran Flakes and a cup of honey to the mixing bowl and stir until well combined.
4. Divide the sticky bran mixture into the holes of the ice tray and firmly press the mixture into the base of the holes, about full, crushing the flakes slightly.
5. In a small bowl, mix the yoghurt and remaining 2 tablespoons of honey until well combined. Top each bran layer with about a teaspoon or 2 of yoghurt, filling the holes.
For the cranberry bran bites:
6. Sprinkle the cranberries over the yoghurt layer.
For the strawberry jam bran bites:
7. Divide the strawberry jam between the ice tray holes and use a toothpick to swirl the jam through the yoghurt.
8. Freeze the yoghurt bran bites for 3 hours or until fully set.
9. Once set, carefully remove yoghurt bran bites from the ice tray, serve on a platter, garnish with fresh berries and ENJOY! *Chefs Tip: Store in an airtight container in the freezer for up to a month!
