Bhappa Doi

Yummmmm! Bhappa Doi, an all-time favourite, traditional Bengali delicacy is now ready in minutes. Two minutes to prepare, two minutes to cook, and voila, in front of you is the perfect Bhappa Doi. While this delightful dessert can be simply described as steamed sweet curds, it requires a bit of tact to prepare because the proportions of the ingredients and time of cooking need to be perfect if you want it to be of the ideal texture, thick but soft. Worry not, here we give you a foolproof method to make it...

Preparation Time: 2 minutes
Cooking Time: 2 minutes
Makes 4 servings

Ingredients
1 cup condensed milk
1 cup full-fat hung curds (chakka dahi)
1 tbsp cornflour

For The Garnish
cardamom (elaichi) powder

Method
1. Combine the condensed milk , curds and cornflour in a bowl and whisk well till no lumps remain.
2. Pour the mixture into 12 small microwave safe bowls and microwave 4 bowls at a time on high for 40 seconds and serve immediately or chilled garnished with cardamom powder.

Variation:
1. Orange flavoured bappa doi- after step 1 add 3 tbsp of orange crush and a few drops of lemon juice, mix well. Proceed as per the recipe and serve immediately or chilled garnished with a little orange crush.
